Gastro-food

                       VEAL WITH VEGETABLES 
The classic one of the kitchen cordobesa:

INGREDIENTS for 4 persons:
700 g. of veal for stew, cut into pieces
1 big onion
1 leek
2 garlic cloves
4 artichokes
2 carrots
1 zucchini
1 leaf of laurel
1 glass of white wine with body
1/2 teaspoonful of black pepper in grain
150 cc. of virgin olive oil extra
Salt.

To peel the artichokes and to reject the hard leaves, to divide them for the half, to peel also the tails and to cut to rodajitas and to reserve in water with lemon. To peel the zucchini, to take the pipes from him and to cut it to cuadraditos.
To clean and to cut into pieces the onion, the leek (only the white part, the green thing guards for soups or creams) and the garlics and to put to frying in oil with a leaf of laurel and salt.

To throw the carrots to tracks, the bits of zucchini, the drained artichokes and the rabitos and the pepper in grain. To give a few returns and to put the meat.
To annoy well and when it is very warm to throw the wine. To allow that it should evaporate and to put warm water in the quantity that adjusts to the pot or the tender of the meat.

To separate and to leave that descompresione well.
To put to pressure approximately 20 min (the time is estimated, it depends on the pot)
If having opened the pot turns out to be too liquid, to put to very strong fire in order that the juices are mixed and stays to our taste. To rectify of salt.


THIGHS OF CHICKEN TO THE OVEN, WITH POTATOES AND PEPPERS.
It is very simple and simultaneously very tasty. 
 I use only the thighs of the chicken since they me turn out to be very juicy and since I do one for every plate avoid myself to slice the chicken and to ask that each one wants.
 Simultaneously, it is an economic plate, since the thighs are low of price.

INGREDIENTS:
 4 thighs of chicken
 4 medium potatoes
 2 peppers of roasting, intermingled
 Virgin olive oil extra
 1 glass of white wine 
 1/2 teaspoonful of thyme
 1/2 teaspoonful of rosemary
 4 garlic cloves
 Pepper of colors, newly ground
 Salt.
